REFRESHING-Lemon Cheese Cake!


So yeah ,I think it's been a while since I updated recipes for you aight?I'm sooo sorry .I don't bake quite in a long time .Heeheeee.

30th June was Bella's birthday .She's coming home from KL and I wanted to surprise her with my new recipe -LEMON CHEESECAKE!

Since I haven't bake like ages ,I faced some problems before I bake which is to find my baking tools and ingredients .I forgot where did I put 'em precious things . Urghhh that's what made me sooooo soooo lazy to bake now .So it came out with lot of imperrrrfections but that doesn't matter cause it tasted goooood omaiigod .The crust did not came out very well . *sigh* Besides,my cheese cake tastes umm.. a bit sour cause I squeezed more than half cup of lemon juice .I thought half cup isn't enough to flavour up my cake!But I was wroooong.So next time,follow the recipe!Jangan nak memandai je. Huhu :P

And ita funny to see my friends' faces when they eat my lemon cheesecake.haha !

Okay okayyy .I'm gonna stop  .Let's check out the ingredients needed shall we? :)

2 cups Digestive  cookies -crashed or smashed or blended or whatever
5 tbsp butter(melt the butter in the microwave for few seconds)

Cheese Mixture :
500 grams of cream cheese
1 cup of castor sugar
4 tbsp lemon zest
2 tsp vanilla essence
3 tbsp cornstarch
3 eggs
2 egg yolks
1/2 cup of lemon juice

Method :
1. Combine biscuit n butter, mix well,Press into the spring form pan, going up the side of the pan only 1/4 inch.  Bake about 8 minutes, until lightly browned.  Cool completely.

2. Beat cream cheese until soft, add castor sugar and beat again.
3. Add the lemon zest  and vanilla essence and mix well.
4. Add in cornstarch and continue beating
5. Add in the eggs and egg yolks gradually and add lemon juice
7.Pour the mixture into the biscuit base
8. Bake in 'waterbath' in the oven at 160C for 1 hour 10 min or until cooked .You can insert a toothpick to check whether it is cooked or not .When it comes out clean,that means it's cooked!
9. Cool it in the refrigerator for 3 hours, then decorate it ! :)
