Outrageous-Banana Pancake

So,our holiday has been extended huh?Means,I have enough time to smug myself with some more bakings, you see I might not get to bake madly next year.
I have made a pancake for breakfast,to my little nephew and niece and the twins.Too many kids at home!
I've did fluffy american pancakes but that morning I have some bananas left on the pantry and it would be very wasteful if I let them rotten and bruise .So,I've improvised my pancake recipe and Voila!Banana pancakes are served, people!
Ijan sent this to me with a caption:'How could you aufa"

  • 1 cup of flour
  • 6 tbsp of sugar
  • 1/2 cup of milk
  • 3 eggs
  • 1 tsp vanilla essence
  • 1 heap tsp of baking powder
  • 3/4 bananas (mashed)

  1. Whisk the eggs and the sugar and add in vanilla essence.Mix in the flour and baking powder and mix well.
  2. Add in the mashed bananas together with the milk and mix again until there's no  lump.
  3. Pour on a pan and flip when bubbles formed on top of the batter.
  4. Serve with nutella or syrup.Or you can add some chocolate chip into the pancakes. :)

Crème Brûlèe

Like suddenly I missed Paris.

I went to Tesco Kota Bharu yesterday with Bella .She wanna bake some macarons while her staying in Kota Bharu. Whether she's going to promote it on her instagram ( @bakesterbella) or I am going to promote it among my friends.

So yeahh the eggs are back in the kitchen and I can bake anything!I made a good choice today.I've chose creme brulee as it does not require too many ingredients. Also, the ingredients are very cheap.

I made a research today. From a research I've set up an experiment. The problem statement is:Can cream be subtituted with milk?
If you don't have cream at home, you can use milk, coconut milk or yoghurt for subtitution. The texture will be vary from others. But still, heavy cream does the best work!

I used evaporated milk and heyy,it still tastes good and the texture is not bad at all!

So,here it comes.

  • 4 egg yolks
  • 5 tbsp sugar
  • 1 vanilla pod or 1 tsp vanilla essence
  • 250 ml whipping/heavy cream (I used evaporated milk)
  •  caster sugar (enough to sprinkle on top)

  • Method:
  • Preheat the oven to 180°C.
  • Beat the egg yolks, add the sugar a little bit at a time. Beat until light colour and thick in mass.
  • Cut the vanilla pod open and scrape the seeds out with a sharp knife.
  • Mix the seeds/vanilla essence and cream into the egg mixture. Now pour the mixture into ramekins. Put the ramekins in a large oven proof dish, poor cold water into the dish (about 3cm high). Bake the mixture for 30 minutes. Take out of the oven and let cool. Now place in fridge for about 2 hours or over night.
  • Before serving sprinkle castor sugar over each ramekin and caramelise either with a gas burner or under the grill in a very hot oven. Et viola.x

So I made some, taraaaaa.Blueberries muffins.Yet,in a small batch cause yeah,it's just me,bella and my cousin Athirah here in the house yoo!!

These muffins are dense, and can be lightened by substituting cake flour for some of the all-purpose flour.

    Chocolate Pavlovaa

Baiklah, while watching for the football match between Team Malaysia and Vietnam,I'm having my chocolate pavlova I made this evening. Wuhuhuhu~

I have made pavlova too many times but it is always a never for chocolate pavlova.Just today, after I realised I need to post a new recipe for you guys so I searched for the recipe throughout the net.
So,the recipe that won my heart is from nigella lawson's page. Man,she's the celebrity chef that I love the most although she looks messy and sexy.haha.She effortlessly makes her dessert looks droooooolinggg.

It's also my first double layer pavlova!I am so bored of a single pavlova it's no longer interesting .

    You will need:
    • 6 large egg whites
    • 300 grams caster sugar
    • 3 tablespoons cocoa powder (sieved)
    • 1 teaspoon balsamic vinegar (or red wine vinegar)
    • 50 grams dark chocolate (finely chopped)

    for the topping

    • 300 ml whipping/double cream
    • Fresh fruits of your choice
    • 3 tablespoons dark chocolate (coarsely grated)
Preheat the oven to 180°C/gas mark 4/350ºF and line a baking tray with baking parchment. Beat the egg whites until satiny peaks form, and then beat in the sugar a spoonful at a time until the meringue is stiff and shiny.

Sprinkle over the cocoa and vinegar, and the chopped chocolate. Then gently fold everything until the cocoa is thoroughly mixed in.

Mound on to a baking sheet in a fat circle approximately 23cm / 9 inches in diameter, smoothing the sides and top. Place in the oven, then immediately turn the temperature down to 150°C/gas mark 2/300ºF and cook for about one to one and a quarter hours. When it's ready it should look crisp around the edges and on the sides and be dry on top, but when you prod the centre you should feel the promise of squidginess beneath your fingers.

Turn off the oven and open the door slightly, and let the chocolate meringue disc cool completely. When you're ready to serve, invert on to a big, flat-bottomed plate.

Whisk the cream till thick but still soft and pile it on top of the meringue, then scatter over the fruits.

Coarsely grate the chocolate so that you get curls rather than rubble, and sprinkle haphazardly over the top, letting some fall, as it will, on the plate's rim.

    Small Batch Chocolate Chip Cookies

Most chocolate chip cookie recipe make at least a few dozen cookies,so I googled for a small batch recipe as there are only me,bella and amar in the house.I wouldn't want to bake a lot of cookies and end up them in the trash no no no.

I baked them in tin cups and I thought iy would shape them perfectly. But,I forgot one thing that the cookie will spread and end up I got my thick cookie. So the batter turns into cakey texture more like cakey congo bars! But Alhamdulillah,it tastes sooo good though. So,here I present you the recipe.

Lindsay Ann's Perfect Small Batch Chocolate Chip Cookies
Yield: 8 (3 1/2 inch) cookies (click here for a full batch recipe)

    • 3/4 cup (90g) all-purpose flour, weighed or spooned and leveled
    • 1/4 teaspoon baking soda
    • 1/8 teaspoon salt
    • 1/4 cup (1/2 stick) unsalted butter, melted (browned if desired)
    • 5 tablespoons packed brown sugar
    • 3 tablespoons granulated white sugar
    • 1 egg yolk
    • 1 1/2 teaspoon milk
    • 1/2 teaspoon pure vanilla extract
    • 1/2 cup semi-sweet chocolate chips (or mix-ins of your choice)

Preheat oven to 350 degrees F. Sift/whisk together the flour, baking soda and salt; set aside. With an electric mixer, beat together melted butter and sugars on medium speed for about two minutes. On low speed, add the egg, milk and vanilla extract. Gradually add the flour mixture just until incorporated. Fold in chocolate chips or mix-ins of your choice with a spatula or wooden spoon. Scoop 8 mounds of dough onto a parchment lined cookie sheet. If dough is too soft, cover and refrigerate for 1 hour or up to 48 hours.

Bake in preheated oven for 11-13 minutes or until edges just start to turn golden brown but centers are still soft and puffy. Do not over bake. Let cookies cool for about 2 minutes on baking sheet before transferring them to a wire rack. Serve warm or cool completely and enjoy!

    Molten Chocolate Cake in Mug

    Well Assalamualaikum to all .
So this is the longest holiday for all students. So I decided to join a tuition class here in Kota Bharu . I have no class on weekends so I have plenty of times to try on some new recipe. Since currently there's only me and my sister at home,I've searched for something in small portion.
Single serving molten lava cake recipe - Easy recipe that makes one molten lava cake with a warm chocolate lava center. Perfect as a single chocolate dessert or to share with one other person.
So I made this one in a mug.Its easier when you don't have to flip them no longer!

      • ¼ cup semi chocolate chips
      • 2 tablespoons butter
      • 2 teaspoons sugar
      • ¼ teaspoon vanilla extract
      • 1 egg (room temperature), beaten
      • 1 tablespoon flour
      • Optional Garnishes: ½ teaspoon confectioners’ sugar for dusting, fresh fruit, and a dollop of whipped cream or vanilla ice cream.

      • Preheat oven to 400°F.
      • Fill a small pot with 1-inch of water.  Fit a larger stainless steel or glass bowl on top of the pot to make a double broiler.
      • Heat the pot of water on medium-high heat.
      • Add the chocolate chips and butter to the stainless bowl.  The chocolate will quickly begin to soften and melt.
      • Quickly whisk the chips until nearly completely smooth.  Turn off the heat and add the sugar and vanilla.  Continue to whisk the chocolate until completely smooth.
      • Carefully remove the bowl from the hot pot to the counter.  Allow the chocolate to cool for 5 minutes, stirring occasionally.
      • Whisking continuously, slowly add the egg into the chocolate mixture a teaspoon at a time, incorporating the egg addition each time completely before adding more.  You don’t want to add the egg too quickly because the warm chocolate will cook the egg.  Continue to do this until the chocolate batter looks smooth.
      • Stir in the flour until mixed in.
      • Generously spray the bottom and sides of one 4-ounce ramekin or coffee mug.  This will help the cake to release from the ramekin after baking.
      • Add the batter to the ramekin.  It will be about ¾ cup full.
      • Bake for 10 minutes.  After 10 minutes, the cake will appear to be baked but when touched in the center will feel very soft.
      • Remove the cake from the oven and allow it rest on the counter for a minute.
      • You can serve the cake in the ramekin or turn it over onto a plate.
      • If you gently touch the sides of the cake with your finger, it should pull away from the sides.
      • After one minute, cover the ramekin with a serving plate and flip the plate to right side up.  Slowly and carefully begin to lift the ramekin off the plate.  If it appears the cake is not releasing, lower the ramekin back down to the plate and gently shake the ramekin back and forth and try again.  If it still does not release, invert the cake back to the ramekin and use a thin paring knife to release the cake from its side and flip again.
      • Dust the lava cake with powdered sugar and dollop with a small spoonful of whipped cream or vanilla ice cream.  A small berry and fresh mint leaf also make nice garnishes
      • It goes well with coffee too!

    Different Ramadhan?-Month I Was Born

    Assalamualaikum ya ukhti
Alhamdulilah  now we are breathing the air Ramadhan .Is it just me or the atmosphere of Ramadhan is different?
Or maybe I feel that way because for the first time I have to go through ramadhan without my family?Yes that could  be the answer. You might think it’s so pathetic to break the fast with plain simple food in the hostel but I’ll tell you. It’s not that bad!
We woke up for sahur at 4.30 am with our pyjamas(making sure the aurah is properly covered).BuI don’t really eat rice for sahuur. My stomach won’t accept it.So ,every sahur I will go down to Bilik Kopi and have my meals there. The food I always eat-I’ll tell you now.The main course is I will take a  Jaacob Weetamil Cracker, spread with Nutella and pat!Sanwich with one more cracker. It supposed to be bread but I’m just scared coz bread can only lasts for few days then  if the bread grow fungus  eww I’ll get a stomach ache. Then I’ll have cereal with low fat milk, cookies,Nestum hot drink and a few kurma  and raisins.Last but not least I’ll drink plain water so I will not be dehydrated easily.

Frankly,it was so tiring and exhausting at the hostel . You get back from school,go to pray at the surau,go up the dorm to change the prep unform and the go up to  the academic block for prep. With the burning hot weather, you’ll need something to quench the thirst, even the  water in the drain looks AHHH .(NO I’M JOKING).In the evening we’ll have tadarus among the dormmates.Only in fasting month, you’ll be entertained by beautiful songs while you’re eating.Everyday there will be some kuih and flavourfuk beverage for us.i forgot to mention ,our canteen also sells some food and drinks which our principal give name as SESERI BAZAAR.
Then, our tarawikh will be conducted by an outsider imam so we’ll get the feeling of solat tarawikh in our hometown . There is still prep!!until 10.45 and our supper is waiting .

This ramadhan is different because I’ll be celebrating my birthday in Ramadhan, which is tomorrow{7th July2014}.Last year,it was 8th july where we start to fast.Ah yes,I’m at my home In Gua Musang. We’re on our pulang bermalam!Gonna be in school this evening.
So I think I’m gonna proposed Mama a HUGE birthday party .There are so many ppl who were born in July in my family. Including our King,Ayah,Kakcik,,Farees,Adreena, and so on }There should be 7 but I forgot so sorry.

So this time,I think I’m just gonna buy a cake from Secret Recipe or anywhere to treat my dorm mates and classmates. We’ll have a huge celebration with barbeque soon .

I just can’t wait to go back for Raya .Coz Abang Anam gonna have a wedding this rayaaaaa oh mai god it’s been a long time since we had this occasion!I miss the time to be the flower girl and the host where you can open up the gifts ,eat cakes and enjoy part of the hantaran and  feel like a boss on a massive birthday party.Coz I remember the last time kaklong got married,Abang Farid gave a box of PATCHI chocolates and omg I was forgetting the world for a sec.
So, this Ramadhan,I would like to apologize to everyone every human on Earth for my wrong doings.May our ibadah will be accepted by Him and He will bestows His blessings in our lives and grants our dua’.And not to waste foods please. When you’re going to bazaar, particularly.  :D
I’ll be sitting ICAS on this Tuesday .Pray for me so that I will get an international certificate.Amin~

    A Little Bless-Umrah

MasyAllah its been a while! So how are you fellas?Discovered more fun in life? You're fine. I know you are.

For your information,I just finished my mid year exam. It's super difficult to me . dad brought me to perform an umrah[at last!] . He promised to bring me there since I was in Form 2 . Maybe because he runs out of his budget as he already brought my twain sisters there [perhaps]. So this time, its me and my brother,Atif's turn !Alhamdulillah wa syukurillah.Terbaiklah!Terima kasih Ya Allah!I love You Allah!Tinkkkkk~

I was so haaaappyy and excited to go there but unfortunately I've no idea what people do during umrah [=,=]. But our Pendidikan Islam syllabus kinda helped me to understand it . And I also joined the form 5 students during a class and practical on Haji and that really helped me out. Wuhoo . And my two friends from the same school,Nisa and Syuhadda also going for umrah, the same day I'm going.

    Constructions everywhere.

The 10 hours journey is kinda fun ya know . There are different sceneries on the plane .Unlike all the flights I took to other countries . I saw desserts with different patterns from top, different shapes of clouds . The fluffy ones, the crooked ones, the dark ones, the bright one.Masyallah saya suka saya suka !!I'd rather not to sleep. :P

So before reaching King Abdul Aziz airport in Madinah,we stopped at the airport of Riyadh first .And it only took one hour from Riyadh to Madinah with the plane.Just like a route from Kota bharu to KL.I can't tell ya but I'm a bit nervous to be His guest.I'm sos scared I'm not ready for this. The first night there, urmm ..woah I can really feel the heat . It was 40-50 celcius . Can you imagine? Its Mubarak Sliver hotel we're staying in .oh I forgot to tell,we're with Andalusia Travel and Tours with the slogan PENYUCIAN JIWA DI TANAH SUCI . Hehe . So back to the hotel,it was not far from Masjid Nabawi so no excuse for not going there okay ladies ?Unless you're......

First time of wearing niqab. It protects you from the dust.Maybe its not awkward at all wearing niqab there. Our contry, maybe?

    That day I cut my finger I don't even know why . What I know,it hurts.Especially whenever I take my wudhuk :(

The next day,we went to masjid nabawi to pray at Raudhah .To know where is the perimeter of Raudhah, look at the carpet .Me and mama took turns.I let her pray first and I watch her from the back. It's better this way. You 're in Raudhah when you're on the green carpet . Some people pray on the red carpet after coming this far. Woahh I remember that time we waited so long coz too many people wanting to go in . As I go in,man!I was pushed, pulled and dragged by random women . Sometimes people were kicked!Honestly,I was about to cry . I hate crowds.No.No.No.I mean,I hate to be in crowds . I have ochlophobia . I can't be in crowds. I remember last raya, there were so many people there laughing and   talking and that and that. And tears automatically go down to my cheeks .Bella is the one to calm me down . She knows my weakness. The same thing happens at Kl Festival. Too crowd!Like chinese said,人上人海.So she treats me some dumpling soup .

Masjid Quba here we come!!Prayed tahyatul masjid and we went to Bukit Uhud.According to my mutowwif,Ustaz Ilyas,Bukit Uhud is the biggest bukt in Madinah. If I'm not mistaken. Then we also went to 'Bukit memanah' with its own history which I forgot coz I wasn't listening to him eee. We passed by two masjid:Masjid dua kiblat and The masjid where Perang khandak occurred.Oh the Date Farm! Not the date the couple do. It's date with seed in it . [I know. Not funny] but lovelies, many people que at the entrance to go in . So I choose to stay outside and take pictures [selfie] with the uppermost leaves of pokok kurma that was not closed bt the fence . Now here is the interesting part . Nenek lost her shoes after praying asar at Masjid Nabawi . Wanna know the most interesting part?Me and Mama lost ours after isyak,at the same masjid!so we bought 10 riyal slippers outside the masjid  .What should we do,people??Redha. Good .And after that,we put our slippers in a plastic and carry em with us all the time . Should buy a new one before going on the plane . Herrrrrrr herrrr herrrrrr,

There is a building in front of Masjid Nabawi with H&M and Starbucks outlet . You can access the second floor from H&M . There's Victoria's Secret,MAC,another Starbucks,Payless,Next and more. That night it was so hot so I bought frozen yoghurt at PinkBerry. Nyumss . Given you to choose four toppings.Want extra toppings?Extra two riyal lah!

Last day in Madinah.Jubah hunting for everyone in Malaysia! But I just bought a piece of black jubah . Maybe i'll find one more exquisitive jubah in Mecca?Because I really love the quality here.

So Maassalamah Madinah!Assalamualaika Ya Rasulullah . Gonna put myself in kain sembahyang for ihram . I guess it took 7 hours to mekah . So along the way,we have to talbiah coz 7 doors of Mecca are guarded by 7 angels .There's a stop where you can have nasi arab along the journey.

Wadi kudai . Wadi kudai is a place our Prophet Muhammad pbuh used to stop to eat and bath. He asked Ummu Maaban something to eat but she had no food left . Her thin goat has no milk at all . So he asked her permission to squeeze the milk from the goat .He gave a pat on the goat . And promptly the goat become corpulent and it gives out much milk !! When her husband came home,he was taken by surprise as there's more than enough milk for them.He was curious .Ummu maaban described Muhammad's appearance to her hubby. Then she herself searched for the man in madinah and finally she embraced Islam.
Again, this story was told by my mutowwif .  So we reached Makkah Hilton Towers around 10pm ,eventually! And of course,Hilton is more condusive and comfortable .Alhamdulillah. But the responsible mutowwif gave us an hour to prepare ourselves and gather again at the lobby to do our first umrah!I'm very grateful for this moment. He guided us to tawaf around Kaabah and then sai' . Then go back to hotel. Then have our night rest.

Whenever I do tawaf,I can't get off my eyes from the Kaabah. It's just so beautiful.I always dreaming of coming here and touch the kaabah. But,it's very impossible to go near the Kaabah with the crowds.

We did our second umrah after went for ziarah at some places ie:padang arafah, tempat melontar, muzdalifa and so on . Anddddddd.....
I visited my relative, long lost never found pak Cik Rushdi at his house .  I never met him ..until that day . No wonder I never know him . He was borned and raised in Mekkah .But luckily he still can speak malay . But not his sons and daughters. His son has an asian face (sebijik macam melayu hei) but he speaks arabic. VERY.FLUENT!
And her wife love to cook us. We went to her house after asar until maghrib and she cooked us twice . Her nasi arab was soooooo goooooddd I cannot say . I'm gonna be a wife like her soon hehehe .

I tell you,I love to walk and discover new things alone . I always going out myself while my mum and nenek were at some place . Like they don't have to know my whereabouts . Walking alone is pretty fun ! I feel freeee and big enough that I can get married . oppss!Sometimes Mama allowed me to walk and go out alone,of course by providing some Riyal . Hehe . What the worst can happen?Heeeee.

Then the third umrah ,miqat at Tana'im . It's like 15 minutes from our hotel.or maybe half an hour I don't know.

So later it was time to go back home-Malaysia .We have to take a bus to Jeddah as we all have to depart from Jeddah Airport . Seriously, you really really REALLY need to have patience at the airport . Mum said that it's like one of the 'poorest' airport . Well just the system is not managed efficiently . And the cleanliness . And the workers . Before the check-in,you have to wait outside, without the air-conds .

Kinda sad to go home . I'm gonna miss it here . And going home means that I have to make sure that the homeworksssssss are done, and I have to return to school in a week time . Urghh the feeling sucks .
